Duo Of Michelin Star Chefs Celebrate 1,000 Hours with Vertis


Charter company Vertis Aviation (Booth 1089) is highlighting a pair of celebrated chefs— Aurélien Misse and Benjamin Laffineur —who recently topped 1,000 logged flight hours preparing gourmet meals onboard a Boe
ing Business Jet. The talented duo, who trained under famed two-star Michelin Belgian chef Yves Mattagne, spend their days creating customized menus featuring gourmet dishes (with wine pairings, of course) for passengers dining onboard the Privajet BBJ marketed exclusively by Vertis.
Part of Misse and Laffineur’s expertise involves conquering many of the culinary challenges that face in-flight food preparation. For example, to counteract dehydration and the resulting lack of taste, they use only the best and freshest local produce. They have also determined what dishes can be prepared most effectively in a restricted-size galley.
According to Neil Turnbull, COO of Vertis Aviation, “Clients want to be able to choose exactly what they fancy, and by having a chef on board, we know it will be served in the most delicious way.”
From their sky kitchen, Misse and Laffineur have prepared everthing from grilled lobster to spaghetti bolognese. Their signature dish, the “Caviar Box,” is filled with caviar, scallops, sour cream, herbs and other top-secret ingredients. The best compliment the chefs have ever received? A client who had spent two weeks on a luxury trip in the Caribbean once told the culinary duo that the best food he’d tasted on his entire vacation was “on-board the BBJ.”
